Coffee Cake

Serves 6 Preparation time 1 hour

Ingredients

  1. 250 grams refined flour or Maida
  2. 50 grams Nescafe
  3. 300 grams sugar powdered
  4. 250 grams butter
  5. 5 eggs
  6. 1teaspoon vanilla essence
  7. 2 level teaspoons baking powder
  8. 3 tablespoons icing sugar
  9. Sift the Nescafe, flour and baking powder together. Cream the butter and sugar together well.

Add the eggs one by one and mix well. Add the vanilla essence. Slowly add the sifted flour with the other ingredients and fold in the mixture to form a smooth slightly thick consistency without lumps. Add a little milk if necessary. Pour into a greased and papered baking dish or cake tin and bake in a hot oven for 40 to 45 minutes till done. When still hot, sprinkle the icing sugar on top.

Helpful Hints

An easy and non-crumbly way to cut cake or bread that is still warm, is to dip the blade of the knife into boiling water, wipe it, then cut the bread or cake immediately.

A Brief History Of Anglo-Indian Cuisine

The Anglo-Indian Community can be traced back to as early as the 16 th century i.e. to the advent of the Europeans into India . The Portuguese, Dutch, Spanish, French etc. came to India to trade in spices. Towards the later half of the 18 th century, the British made their presence felt with the establishment of the East India Company. As a result of the inter-mingling and inter-marrying of thevarious European races, a new multi-culturaland multi-racial community evolved over many centuries, which later came to be known as the Anglo-Indian Community.
