  1. Make the coconut milk Soak the grated coconut in 2 cups of warm water. Set aside.
  2. Prep the rice Wash the rice and let it soak for 20 mins
  3. Season the oil In a deep pot add 2 tbsp oil, when hot add the cinnamon, cardamom and bay leaves. Stir for a few seconds to release the aroma.
  4. Add the coconut milk, rice, & turmeric powder Add the coconut milk, the rice turmeric powder and salt to taste. Let it cook with an open lid.
  5. Cook the rice When it comes to a boil, turn the flame to low heat, cover the pot and cook for about 20 mins or till the liquids dry up. Your coconut rice is then ready!
