A simple and easy to make Anglo-Indian cauliflower dish prepared with very minimal pantry spices. Lightly seasoned with cumin, turmeric, and chili, then simmered until tender.
This quick vegetable preparation makes an ideal everyday accompaniment to steamed rice, dhal, pepper water, or fresh Indian flatbreads like chapatis and rotis.

In a small bowl, mix the chili powder, cumin powder, turmeric powder, and salt with 1 to 2 tablespoons of water to form a smooth spice paste. Set aside.

Heat 2 tablespoons of oil in a pan over medium heat. Add the fresh curry leaves and fry for a minute until aromatic.

Add the spice paste and sauté gently for 1 to 2 minutes until the spices release their oil.

Pour in about 1/2 to 1 cup of water (add a pinch more salt if needed) and bring the mixture to a gentle boil.

Add the cauliflower florets and stir thoroughly to coat them evenly in the spiced gravy.

Cover the pan and cook on low heat until the cauliflower is tender and the sauce thickens into a flavorful coating glaze.

Garnish with freshly chopped coriander leaves. Serve hot alongside steamed rice, pepper water, or warm flatbreads.
